main property of gluten is its stickiness.
Gluten is a complex protein that is formed by the combination of
glutenin and gliadin as they get mixed together with water. Dough
is gluey because of the gluten it contains. When you make dough
with wheat-flour, it sticks to your hands because of the gluten.
